Delicious Curry Soup With Flatbread


Then it was time for a delicious curry soup here on the blog ! It is easy to make and does not require a long simmering time.



For 8-10 people

Recipe :
3 onions
3 leeks
6 large tomatoes
3 red bell peppers
5 cloves of garlic
1 liter of vegetable broth
2 cans of coconut milk ( 2 cans with each 400ml)
3 tsp of salt
2 teaspoons of curry powder
½ tsp of chilli powder

a little fat for frying

Method :
Chop tomatoes, onions, leeks, peppers and garlic into small cubes. Fry them in a large pan with a little oil. When the vegetables are soft, they must have a go with the hand blender. You decide how much or how little you want them blended. I left some vegetables, so there was a little to chew on. Then add the broth and coconut milk in. When it is well stirred around add the salt, curry and chili powder. Simmer for 10-20 minutes and season with a little more salt, curry or chili if needed.
