Elderflower Sorbet!

Then I felt like making a little dessert here on the blog! And it was elderflower sorbet! It was super delicious, and the texture was like a real sorbet should be! It is fresh and tastes of summer! Very delicious!

8-10 people
2 cups concentrated elderflower (syrup)
3 pasteurized egg whites
2 cups water
200 g of sugar,
60 g of icing sugar
3-4 tbsp of lemon juice

Bring the 200 g sugar and 2 cups water to a boil. When it boils, let it cool for 1 hour in the refrigerator. Mix it with the syrup. Pour the mixture into an ice machine (if you have one) and let it run for fifteen minutes so it can cool down more. If you do not have an ice machine, let the mixture cool down a further 1 hour in the refrigerator. Meanwhile the mixture is running around in the machine or cools down in the refrigerator, you can start on your egg whites and mix it with icing sugar. Beat the 2 things together, so it ends up reminding a bit like meringue. Now mix all the things together and add the lemon juice! You can choose to mix everything together in ice cream maker and make your sorbet finished there. Or you can mix it all in a box, which you put in the freezer. However, it is important that you stir in your sorbet approximately every half hour. After 6-8 hours in the freezer, you have a delicious sorbet! Or after 20-30 minutes in the ice cream maker!
